THE ROLE
The Purchasing Manager oversees all purchasing operations for the venue. You will be responsible for handling/overseeing the procurement of all food & beverages, paper products, and other venue supplies to achieve optimum price value while maintaining superior quality to ensure outstanding guest service and financial profitability. You will manage the purchasing / receiving team and will report to the Director Venue Operations.
THE VENUE
This iconic House of Blues venue is located on the famous Las Vegas Strip inside the Mandalay Bay Resort and Casino. This venue has a full-service restaurant, music hall, and nightclub. It is a go-to spot for unparalled views of the strip.
What you'll do:
• Purchase, receive and secure all inventory for Restaurant, Foundation Room, Music Hall and Special Events. Sole responsibility for all beverage and paper orders; partner with Executive Chef for all food orders.
• Supervise purchasing / receiving department, consisting of 3 full time & 1 part time team members.
• Oversee shipping and receiving team with unloading trucks and checking in merchandise. Match received items to original order, check quality and pricing, and report discrepancies.
• Work with Executive Chef and other department heads to forecast inventory needs, monitor inventory levels, and identify special requests.
• Maintain relationship with all vendors. Take lead on new vendor identification and follow bid process when ordering new items.
• Compile weekly inventory reports and monthly physical inventory counts. Enter and maintain data in inventory system (CrunchTime). Complete additional ad hoc inventory reports.
• Travel to local stores to complete impromptu tasks to purchase urgent and essential inventory items, as needed.
What you'll need:
Required:
• Minimum of 5 years of restaurant inventory experience in a high-volume kitchen operation
• Experience with restaurant inventory management system, CrunchTime preferred
• Extensive computer experience, including MS Office; ability to create and maintain complex spreadsheets in Excel
• Valid driver's license, clear driving record, and reliable means of transportation
• Tolerance of all cultures, music and art forms
• High School diploma
Physical Work Demands:
• Fast paced work environment with extended periods of prolonged standing and working on your feet
• Exposure to extreme kitchen heat and cooler refrigerator temperatures throughout work shift
• Must be able to lift and/or move up to 50 lbs.
